When Owen and I arrived in West Plains we had quite the fancy and delicious surprise waiting for us…

My sister made this cake for Owen! She is quite the cook but it turns out she is also amazing at desserts. And not only did this cake look awesome but it tasted awesome as well. It was a white cake with strawberry and icing layered throughout and it was a-ma-zing!

Needless to say we all loved the cake…

This past weekend Lucas decided to make up some good home cookin’…Bar-B-Que pulled pork sandwiches and home-made fries. He used a rub that a chef friend from church had given us and after hours and hours of slow cooking the meat was finally ready. He added some Bar-B-Que sauce from Kansas City to it and we were ready to go…

For the fries Lucas whipped out the Fry Gran’ Pappy. Now you may have heard of the Fry Daddy but the Gran’ Pappy puts it to shame. It’s bigger and better which makes the fries bigger and better. :)

Thankfully we don’t eat like this too often but we have to start preparing our stomachs for the move back to Missouri and what better way than with Bar-B-Que and fries.

I’ll admit it…I rarely bake. It just isn’t something that I ever think to do. Plus Lucas actually enjoys making pies, crisps, breads, etc. so I figure I should just leave the baking to him. However, with Nacho’s continued need for sweets I decided to make some cookies last week.
I knew I had some Halloween sprinkles that were just begging to be used and we had some cookie dough in the fridge. Now I’m sure you’re thinking, “Shannon, you didn’t really make anything if you just put them in the oven”. And you would be right except for the fact that I made homemade frosting! Not icing but frosting. Meaning boil together flour and milk and then add it to a mixture of butter, sugar and vanilla and…voila…frosting! It was the best thing I’ve made in a long time and thankfully there was plenty of frosting left over for me to nibble on. So feast your eyes on some yummy halloween cookies…


P.S. – I don’t really think these are that amazing or anything…I was just excited about cookies. :)

I’m pretty sure the saying means eating a fresh apple but these apples were fresh before they were baked up into yummy goodness. After our recent trip to the orchard, Lucas has now started making apple crisps, apple pies, apple pizza…ok maybe not apple pizza but after he reads this he might give it a go. :) I love this season of fall and I especially love it since my lubber makes all sorts of yummy things. He says he can teach me how but I figure why learn when I can just enjoy…

Recently Lucas’ parents, Larry and Bonnie, visited us for a week. It was great to see them and show them around our new stomping grounds. Neither one of them had ever been to the east coast so it was fun to take them to NYC, Philadelphia and everywhere in between. We went into NYC two different days and for one day we woke up early to make it in to see the Statue of Liberty and Ellis Island. But it was totally worth it to see these wonderful sites…



I hadn’t been to visit these two places since the first time I visited NYC back in 1998. I remember loving Ellis Island and I wasn’t disappointed this time either.

I thought this man’s eyes were simply haunting. He was an Italian immigrant who came to America and settled in St. Louis, Missouri.

What a wonderful day in the city…

I’m not big on trying new recipes but every once in awhile I stumble across something new that catches my eye. This time my inspiration came from Real Simple in the form of Cheese Ravioli with Toasted Walnuts…

It was super easy and really tasty! I didn’t even add any salt and if you know me then you know that’s a pretty big statement. Even Lucas , who is a big fan of red sauce, like this version of ravioli. So I thought I’d share the recipe with you…
Ingredients…
* 1 14 to 16-ounce package of cheese ravioli (frozen of fresh)
* 1/3 cup olive oil
* 1/4 cup walnuts, roughly choppped
* 1 clove garlic, sliced (mine was minced out of a jar)
* 2 teaspoons lemon juice
* salt and pepper
* 1/2 cup fresh flat-leaf parsley, chopped (definitely use fresh)
* 1/4 cup grated parmesan (I actually forgot this ingredient at the end…opps!)
Cook the ravioli according to the package directions. Drain, reserving 3 tablespoons of the cooking water.
Heat the oil in a medium skillet over medium heat. Add the walnuts and garlic. Cook, stirring, until the nuts are lightly toasted and fragrant, about 5 minutes.
Stir in the lemon juice, 1/2 teaspoon salt, 1/4 teaspoon pepper, the parsley, and the reserved cooking water.
Add the ravioli and toos to coat.
Divide among individual plates and sprinkle with the parmesan.
